Strawberry Vanilla Olive Oil Cake

Sweet Strawberry Vanilla Jam and Vanilla Olive Oil leave this cake moist, fluffy, and SO full of flavor. It's perfect with a big cup of coffee!

Ingredients

• 1/4 cup unsalted butter, softened
• 1 cup Sutter Buttes Vanilla Olive Oil
• 3 eggs
• 1 tsp vanilla
• ½ cup yogurt
• ¾ cup milk
• 1 tbsp lemon zest
• ¼ cup sugar
• 3 cups flour
• ½ tsp baking soda
• 1 tsp baking powder
• ½ tsp salt
• 1/2 cup Sutter Buttes Strawberry Vanilla Jam

Directions

1. Preheat oven to 350.
2. In a mixing bowl mix together softened butter, olive oil, eggs, vanilla, yogurt, lemon zest and sugar.
3. In a separate bowl whisk together flour, baking soda, baking powder, salt. Stir in to wet mixture until combined.
4. Slowly fold in Strawberry Jam until combined.
5. Pour into greased 9x5 baking tin.
6. Bake for 50 minutes or until a cake tester comes out clean.
7. Cool in pan for 10 minutes, then remove to rack and cool completely.
8. Slice, spread with more Strawberry Vanilla Jam & Enjoy!
